We are planning to spend Jan to Feb 2017 in Cuenca. This question has probably been asked many times already–and I will search–but we are particularly concerned about usual cooking facilities in rentals. Because of dietary issues, we will be cooking most of our meals “at home,” so a good stove will be important, gas preferably. We’re hoping to pay in the $500/month or less category, but could pay more to be comfortable, safe near to activities. Thanks to whomever may respond.

Beyond the usual sites (vrbo, airbnb, craigslist) subscribe to Gringo Post, an online community bulletin board in Cuenca. Rentals are often posted there and you can submit your own post stating your requirements.
